I've made pizza before as a vegan without cheese/ using nutritional yeast flakes instead and it just didn't hit the spot. This time I bought some Cheezly Edam cheese and it was surprisingly good! I had tried the mozzarella and cheddar style before and really didn't like it... strange taste. But the Edam is amazing!
One last thing about the pizza before I post the recipe. I used self raising flour for this instead of the usual strong flour and yeast. It was delicious! If you want to make the dough the traditional way (it will be more "bready", mine tasted a bit like scones :)) you could use one like this.
Serves 1- 2
5 tbsp self raising flour (I just poured it in so 5 tbsp is just a guess :S)
Quarter tsp salt
2 tbsp olive oil
1 tsp egg replacer (This isn't essential but I find it makes the dough lighter)
Anything you like!
Sundried tomato paste
Preheat oven to 220c.
Combine all the base ingredients except the water. Then, add water bit by bit, mixing in between, until it forms a dough. Roll it out and put on a pizza pan. Or squish it on with your knuckles if you don't have a rolling pin :P
Now spread the tomato paste onto the base and top with the toppings! My tip with pizza toppings is put them on in order of how long they need to cook. So things like the fresh tomatoes and fake meat slices can go on first, aubergine and courgette can go on last because they need more cooking and of course you always put the cheese on very last.
Cook in the oven for about 20 minutes or until the cheese is brown.
Serve with tonsssss of vegan mayo :D
I put it back in the oven with some fresh spinach for a few minutes hehe :)
