Low Calorie Substitute for Rice

I've been wanting to try this for a while. And I finally did. It was a success! Definitely doesn't taste like rice... but that doesn't mean it wasn't good ;)

Would you believe this whole bowl only has about 200 calories!? 



Well I am stuffed after eating it so it certainly seems too good to be true! But hey ho.

So what is this magical rice substitute I hear you ask? 

Cauliflower! Just grated cauliflower. Some people blend it but I have this cool grating gadget haha.

This is the recipe for the bowl pictured above, but obviously change the ingredients to suit your tastes. I really think mine needed some MUSHROOMS.

The pre-cooked "rice"


Recipe
(Serves one)

Ingredients: 
One small head of cauliflower, grated or blended into rice sized pieces
Half an onion, cut up small
One tsp olive oil
Peas
Fresh coriander, chopped
One tsp minced garlic
One tbsp soy sauce
Pepper (to taste)

Method:
Heat up the oil in a big wok and add the onion on a medium/ high heat. Cook until it is brown (not burnt!) now add the cauliflower. If the peas you are using are frozen, microwave them now for about 3 minutes. Cook the cauliflower/ onion on a medium heat for about ten minutes, stirring every so often. The reason you want to cook it for 10 mins is to dry it out a bit, get it tasting more rice- like. When it is all cooked, add in the rest of the ingredients, including the cooked peas, and cook for a further 3 minutes.
