Almond Cheese

Hello everyone!
So this is my first post in a while... I was busy partying during Christmas time! So I have a ton of recipes I need to write up. Hope everyone had a tasty Christmas ;)

This "almond cheese" is just a simple cream cheese substitute which is pretty delish. You can make it sweet but I guess that would taste a little like marzipan...



You can use this on crackers, in place of cream cheese, or just eat it off a spoon... that's what I did...



Ingredients:

  • Skinless almonds! About a handful or 2. To skin them, soak them in warm water for about an hour and then just pop the skins off. You must keep them in the water right until you are ready to de-skin.
  • 1/4 tsp Salt
  • Water 
  • 1 tsp Lemon juice or white wine vinegar
  • Garlic
  • 2 tbsp Olive oil
After you have skinned the almonds, soak them over night. This will make them easier to blend.



Then pop the almonds in the blender and give it a whir. When they are looking like bread crumbs, add about half a cup of water and the flavourings. As always the flavourings are dependant on taste! I think the olive oil gives it a lovely rich flavour. The lemon juice/ vinegar is there to give some tartness to the cheese, like dairy cheese would have.



Blend it all up some more, make sure to scrape down the sides every so often. If it too stodgy and thick it will be harder to blend, so add some more water. Add the water until it is at your desired thickness.
