Courgette Fritters

Ridiculously simple, ridiculously tasty and ridiculously ridiculous.

Plain flour
Courgettes, sliced diagonally
Cayenne pepper
Olive oil

Pre-heat the oven so it's really hot, to like 230c

Line a baking tray with grease proof paper. Smear it all with some olive oil.

Mix about some plain flour (I would say use a heaped tbsp per courgette) with a pinch of salt, a little cayenne pepper and lots of paprika together. Toss all the courgette pieces in the flour and lay them on the baking tray. Then drizzle a little more oil on top. 

Cook in the oven for about 20 minutes then flip them over and cook until they are nice and brown... could be another 20 mins.
