Delicious, simple, healthy AMAZING pasta topping!

The great thing about pesto is that you can make it with any greens you want. The popular method is using basil. I usually use spinach as it's cheap. I've also known it made with rocket, coriander, kale... whatever you want!
The pesto pictured was a mix of spinach and basil.
Handful of wilted greens/ fresh herbs (to wilt it, put it in a colander and pour boiled water over it. Half a bag of spinach will make enough :) make sure you squeeze all the water out, to do this I usually put the spinach in the blending cup and use the blender to press down on it to pour it out. You could use your hands or put it in a clean cloth and squeeze the water out.)
Nuts/ pine nuts of your choice... a small handful
1 tsp- 1 tbsp olive oil
1- 2 cloves garlic
Blend together all the ingredients except for the nuts. When it is nice and smooth, give the nuts a quick blend so they stay chunky.
Eat hot or cold!
