"I can't believe it's not eggy" vegan mayonnaise!

I am so happy! 

I made a really delicious vegan mayonnaise!

Pre-vegan days I was a mayo addict... like, love the stuff.
Since going vegan, I've been buying vegan mayo, which just doesn't cut it. Very strange beany taste. But I bought it to satisfy my mayo needs.



I decided to attempt to make my own to see if I could make an actually tasty condiment. I researched some recipes and it seemed that the popular one was using a mix of soy milk and lots of oil. I made it, and it was OK tasting but not thick and it didn't taste like mayo.

So I tried it with silken tofu instead. And, YES. 

The finished mayonnaise :)

Garnished with rosemary because that's the only herb in the garden at the moment.
The great thing about this mayonnaise is that it can be low fat. Yeah, you heard me!
Ever wondered why processed dairy mayonnaise is white when it is made out of yellow egg yolks and yellow or clear oil? Because it has a whole ton of other ingredients in it!
So the "low fat" mayo you buy from the supermarket isn't what it should be. Whole lot of thickeners and preservatives. 

Ingredients to Helmann's light mayo: Water, soybean oil, vinegar, modified corn starch**, whole eggs and egg yolks, sugar, salt, xanthan gum**, lemon and lime peel fibers** (thickeners), (sorbic acid**, calcium disodium EDTA) used to protect quality, lemon juice concentrate, phosphoric acid**, DL alpha tocopheryl acetate (vitamin E), natural flavors, beta carotene**. **Ingredient not in mayonnaise
Appetising? Nah...

So when I say this mayo is made without egg yolks, don't be put off. It's likely you aren't eating proper mayonnaise anyway.

Down to the recipe!
Half a block silken tofu
Olive oil
1/4 tsp Salt
1 tsp Lemon juice
1 tsp Cider or white wine vinegar
Black pepper
1/2 tsp Mustard
1 Garlic clove (optional)
Fresh or dried herbs (Optional)

This is silken tofu, for those who don't know. Make sure you get this and not firm tofu!

Method:
Blend all! 

No need for that stupid emulsifying needed to make eggy mayo. All this needs is a quick blend to combine the ingredients. 

The amount of oil is up to you- I reckon it tastes better with more. But without it, you have a low fat mayonnaise ;) so use 1- 3 tbsp.
